The right choice comes down to fit, accuracy and how you plan to use it.
CO2 in a gas bottle is stored at high pressure. Your keg and beer lines need a much lower, controlled pressure. The regulator sits between the bottle and the gas line, reducing that bottle pressure to a usable level and keeping it steady as you pour.
Most single-gauge regulators show the working or delivery pressure only. Dual-gauge models also show the cylinder pressure, giving you a rough indication of how much gas remains. That second gauge is useful, but it does not tell the whole story. CO2 cylinder pressure is strongly affected by temperature and tends to remain similar until the bottle is getting close to empty. Weighing the bottle is the more reliable way to check what is left.
For most chilled beer systems, serving pressure often lands somewhere around 8 to 12 psi, or roughly 55 to 80 kPa. There is no universal setting. A single-output regulator is designed to supply one pressure setting. If you have two kegs of similar beer at the same temperature, you can run a gas splitter or manifold after the regulator and supply both from one outlet. This is a tidy and cost-effective arrangement.
The trade-off is that both kegs receive the same pressure. That is usually fine for two pale ales or lagers, but less ideal if one keg is highly carbonated cider and the other is a low-carbonation stout. For genuinely independent pressure control, choose a dual-body or multi-body regulator with a separate adjustment for each line. It costs more, but it prevents compromises in carbonation and pour quality.
It is easy to blame a regulator for foamy beer, yet foam is often caused elsewhere. For two or more kegs, decide whether they truly need separate pressures. A manifold is ideal when they are similar products served at the same temperature.
