A fresh pour from your own fridge or kegerator is hard to beat, especially when you know exactly what went into it. For most beginners, an extract kit is the sensible place to begin. It uses pre-made malt extract rather than asking you to mash grain, which cuts down the equipment, time and possible hiccups. You still choose the style, add water and yeast, manage fermentation and package the finished beer. That is plenty to learn from one batch.
A pale ale, draught-style lager kit or easy-drinking cider is a good first choice. These are generally forgiving, familiar and enjoyable without months of ageing. Big, high-alcohol beers and heavily hopped styles can wait until you have a few successful brews behind you.
All-grain brewing gives you more control over the recipe, but it also requires more gear, more cleaning and a longer brew day. It suits people who enjoy the process as much as the pint. The airlock may bubble within a day or two, but bubbling is not the best measure of fermentation. A loose lid, changing temperatures or dissolved gas can all affect it. Hydrometer readings taken a few days apart are a more reliable way to confirm that fermentation has finished.

Kegs cost more upfront, but they make serving easier and reduce the time spent washing and capping dozens of bottles. They also allow you to control carbonation with CO2 rather than relying on bottle conditioning.
